A cooked breakfast doesn’t always have to be topped with beans and fried eggs. If I go out for brunch and see this on the menu, its my first choice. Such a healthy and tasty meal and i’m glad we are embracing new flavours and ideas, nothing wrong with a bit of chilli for breakfast.
Eggs – 4 (Fresher the better for poaching)
White wine vinegar – A splash
Vine tomatoes – 2 vines
Bread for toast – 4 slices (I used sourdough, Rye is also gorgeous with it)
Ripe Avocados – 3
Red Chilli, seeds removed and finely chopped – 1 ( use less if you don’t like too much heat)
Coriander Leaves, finely chopped – A handful plus a few to garnish
Limes – 2
Smashed Avocado: Slice the Avocados in half and remove the stone. Carefully score the avocado whilst it is still inside the skin into cubes. Now use a spoon and scoop it out into a bowl. Smash the cubes of avocado a little using a fork. Now add the chilli, coriander, squeeze of 1-2 limes depending on how you like it, salt and pepper to season. Mix this all up and taste, if you want to add more of anything just throw it in, I love chilli but go easy as it will increase in heat a little as it sits for a few minutes. When you’re happy with the taste, cover the bowl and set it to one side.
Pre-heat your grill and boil a saucepan of water. Once the grill is heated, place the tomatoes onto a baking tray and drizzle a little olive oil over them. Place these under the grill for 5 -8 minutes keeping a good eye on them. You want the skins to burst and to colour a little to get a good flavour.
Meanwhile, when you water is boiling in the pan you can poach the eggs. Add a splash of white wine vinegar and when it is boiling again, add the eggs gently to the water ( I usually do mine two at a time but if you’re feeling courageous go for 4). Pop the toast under the grill or into a toaster and the eggs and toast will take about the same time, 3 minutes or so. Carefully lift the eggs out of the water using a slotted spoon and gently press against the yolk area, if it feels firm but still soft inside then it is ready. Lay the eggs onto some kitchen roll to drain the water.
